2018-09-04_17-36-46_918Are you one of those people who decides to take on a new nutrition plan at the FRESH start of the month because….DUH! you can??

Me, too.

I did not understand JUST how much my body was becoming more and more reliant on sugar, but here we are and HERE you go…..a little treat, out of a bit of desperation, from me to you!!

Choco Banana Dippers

(vegan, sugar/grain/legume/dairy-free, paleo, Whole30-approved)

1 Banana — cut into 1/2″ thick medallions (place in freezer for 20 minutes)

Flax seed (optional) — top each banana slice with a bit of flax before freezing

For chocolate:

2 T coconut oil, melted

4-5 T unsweetened cocoa powder, (I used this one)

–Stir the cocoa and melted oil together until the consistency is similar to fine melted chocolate.  If it seems too runny or thin, add a bit more cocoa powder until the consistency is to your liking.  You want it to have a nice snap when bitten into, but to also be thick enough to coat your bananas.

  1.  Once bananas are frozen and chocolate is mixed, remove slices from freezer and begin to dip into bowl of chocolate.  This process can be messy, so try to utilize both hands for utensils to help you (a spoon and a regular fork work just fine).
  2. Dip one banana slice at a time and replace on tray (see video below).  Continue until all medallions are dipped.
  3. At this point, if you have extra chocolate mixture, you can “top”  your dippers with some extra things (seeds, nuts, dusting of cinnamon, sea salt)…take a small dab of wet chocolate and top the medallion, then top with topping.

I have become pretty inclined to the dark chocolate nature of these treats.  If you do decide to make them, and are MORE used to semi-sweet or milk chocolate, these will be bitter-tasting.  The banana is your sweetness….with that in mind, you could absolutely add a bit of stevia to your mix if you need additional sweetness.  I would not recommend adding granulated sugar, simply because of the nature of its texture–it will leave your chocolate gritty.

Feel free to reach out with any questions or comments!!  I would love to see your concoctions!!
